Watch a dancer cross a stage: every step runs into the next and nothing looks like work. That ease is grace. Graceless can be thought of as the same scene with the ease removed — the steps still get the person across, but now you see every one of them and how heavy each one is. English then lends that picture out, to the way a person treats others and to the shape of a building.
Wiktionary gives Middle English graceles, equivalent to grace plus -less. The word has always been simply grace with the grace taken out; what changes between the senses is which kind of grace is missing.
