Think of running your hand over a surface that should be flat but isn't — a stone path where one slab sticks up and the next one dips down. Nothing is level with anything else. 'Even' means everything sits at the same height; 'uneven' takes that away. Every other use of the word keeps the same feeling and just changes what is being compared: the speed of a heartbeat, the size of two shares, the quality of different chapters in a book.
