Something that was inside comes out where people can see it. Sometimes that is a group leaving the house for the day and coming back at night. Sometimes it is a performer out in front of an audience. And sometimes it is a fact that was kept in the dark being carried out into the light by somebody else. The word is just out with -ing on it, so the whole picture is one movement: from in here to out there.
Wiktionary gives outing as out plus -ing, and compares Old English yting, an outing or journey. So the word is built straight from the direction word: the act of going out.
