You can picture honest as a person who is 'straight' — no hidden tricks, no crooked moves, nothing covered up. What you see is what is real: they tell the truth, they don't cheat or steal, and there is no gap between the front they show and what is actually inside. From this one idea of 'straight and nothing hidden' all the other uses fan out.
