The one who into the ring and came out on top — the person who fought and won, and now stands for the side that won. From that single picture two things grow: being the winner, and being the one who stands up and fights for a cause. Both keep the image of someone who enters the contest and carries a side on their shoulders.
From Late Latin 'campionem' — a fighter in the 'campus' (field, arena), i.e. one who goes into the arena to fight, often on behalf of someone else. Both the modern 'winner' and the 'one who fights for a cause' sit right on that picture of the arena-fighter.
