Pressed or crushed until it is soft and smooth and has no lumps left. It is used mostly about cooked food, and it usually comes before the noun, as in mashed potatoes.

One way to hold mashed: something has been pressed down hard, again and again, until the shape it used to have is gone. A boiled potato under a fork stops being a potato and becomes a soft, smooth heap. Nothing inside it is holding it up any more. That picture of being pressed until you cannot keep your shape is the thread that runs through the word.
