You can picture two hard surfaces pressed together and rubbing, over and over: a stone on a stone, metal on a wheel, beans under a blade. Nothing happens fast. Each pass takes off a tiny amount, the contact is rough, and it makes a harsh sound while it lasts. Every use of the word keeps some part of that picture: the slow wearing away, the noise, or the repeating.
Wiktionary's entry gives grinding as grind plus -ing, inherited from Middle English gryndynge. The -ing turns the action into a thing, which is why the same form works as a noun for the activity and as an adjective describing something that acts like it.
