You can picture prove as putting something to the test and watching it come through: you don't just claim it's true — you bring facts, or let time pass, and the thing shows itself to really be so. The Latin root probare means 'to test, to try, to find good'. Hold that 'test it and let it show its true self' image, and even the bread rising and the legal sense fall out of it: each is something being put to the test and turning out to be what it should be.
Prove comes from Latin probare 'to test, try, examine, judge as good' (also the root of probe and probation). The modern senses keep that testing thread: a claim is tested against facts, a person tests himself, dough is tested by rising, a will is officially tested for validity.
