State what you have trained in and can do for others, and the word means your calling; gather everyone who has declared the same thing and it means the whole field; and the older use, declaring what you feel or believe, is still there in phrases like a profession of faith.
Etymonline: around 1200 profession meant 'vows taken upon entering a religious order', from Latin professionem 'public declaration'. The occupational sense — 'occupation one professes to be skilled in, a calling' — appears by the early 15th century, and 'body of persons engaged in some occupation' by 1610. So the job sense and the declaring sense are one word, not two.
