Think of 'yours' as a small word that already carries the noun inside it. Where 'your book' needs two words, 'yours' does the whole job alone: it points at the person you are talking to and says 'the thing on that side belongs to you.' Because the noun is already swallowed up, nothing follows it — you say 'This seat is yours', never 'this yours seat'.
