You can think of 'skin' as the thin outer layer wrapped around the outside of something — first the soft covering over a person's or animal's body. From that one picture everything else grows: the same kind of thin wrap on fruit, on a sausage, on cooling liquid, on a plane or even on a phone screen; that treat skin as the boundary between 'you' and the world (getting under it, no skin off your nose, only skin-deep); and the verb side — taking that outer layer off, or a bit of it away.
