You can think of an odyssey as a road that should have been short and turned out to be ten years long. Someone sets out meaning to get home, and the way keeps bending: storms, wrong turns, people met and lost. The distance is not the point. The point is that by the end the has been rebuilt by the road, and the whole thing has become a story worth telling.

Wiktionary derives odyssey from the Odyssey, from Ancient Greek Ὀδυσσεία, the story of Odysseus, who spent ten years getting home after the fall of Troy. The common noun keeps the shape of that plot: a journey that should have ended and did not.
