One way to see it: an abstract idea is invisible until you hold up one concrete case and say 'like this'. Latin exemplum = a sample taken out of the batch. To exemplify is to make the sample carry the whole.
From Latin exemplum "example, sample" (via Medieval Latin exemplificō). The -fy ending is 'to make'; so exemplify is literally 'to make into an example' — to turn a thing into the visible sample of an idea.
