The interviewee is the person who answers the questions in an interview. That may be someone hoping for a job, someone talking to a journalist, or someone taking part in a study. The ending -ee marks the person on the receiving side of the action: they are being interviewed, not doing the interviewing. It is a normal, slightly official word — you will see it on forms and in news reports. In casual talk people often just say “the person being interviewed,” or, for a job, “the candidate.”
