Innumerable means very, very many — so many that you would not sit down and count them. “Innumerable stars” means a huge number of stars, not that counting is truly impossible. People use the word to sound strong, often in writing that is a little formal. In speech, countless or so many is more common. Though actually, this word is easy to mix with , which looks similar but is about maths skill, not about a large number.
