A housesitter is a person who stays in someone else’s house while that person is away, and looks after it. They live there for a while: they water plants, take in the post, switch lights on and off, and make the place look lived in so it is less obvious that it is empty. They may also feed a cat or walk a dog, though that is extra, not the core of the word. It is not a housekeeper. A housekeeper cleans and runs a home for people who still live there; a housesitter is there because the owners have gone. You will also see house-sitter, with a hyphen, and the verb to house-sit. It can be paid work, a favour for a friend, or a cheap way for the sitter to have a bed. People who travel a lot use the word more than people who never leave home.
