You can picture young as 'has not lived very long yet — still near the start'. A young child has only been in the world a few years; everything about it is fresh and at the beginning. From that one picture — early in the span of a life — the word stretches: first to other things that have only just begun (a young country, a young company), then to looking fresh, and finally, as a noun, to the young creatures and young people who are at that early stage.
