You meet it in two directions: praise — "beautiful workmanship," "fine workmanship," said of furniture, a watch, a suit, a temple roof — and complaint, which is where learners meet it most in real life, because "poor workmanship" or "faulty workmanship" is the standard phrase in guarantees, insurance papers, and building disputes. A warranty that covers "defects in materials and workmanship" is promising two separate things: the stuff was good, and the making was good. That contrast with materials is the key to the word. Two chairs from identical wood can differ completely in workmanship. It is about the hand and the eye of the maker: the joints, the stitching, the finish, the parts nobody sees. It applies to made objects, and by extension to careful hand-done work generally; you would not use it for writing an essay or closing a business deal.
