From Old French vyn egre, literally 'sour wine' (vin + egre), which is exactly what it is: not a made-from-nothing seasoning but wine that has fermented one step further. The egre part is the same root behind English eager.

vinegar 來自古法文 vyn egre，就是 vin（酒）+ egre（酸），字面上是「酸掉的酒」——這正好說明了它是什麼：不是憑空做出來的調味料，而是酒繼續發酵之後變成的東西。認得 egre 這個部分也順便認得英文的 eager（原本是「尖銳、急切」的意思，跟 acid 同源）。
