To unwind literally means to undo something that was wound (wrapped) up tightly - like unwinding a ball of string or a spring inside a clock. But the much more common everyday meaning is to relax after being busy or stressed - "I like to unwind by watching TV after work" means letting go of stress and calming down, as if your body were a tightly wound spring finally .
