To unsubscribe is to ask to be taken off a list you were on, so the messages stop coming. These days it almost always means email: you click the tiny word 'Unsubscribe' at the bottom of an advertisement, and that company should stop sending you things. It has spread beyond email too — you unsubscribe from a YouTube channel, from a podcast, from a paid app or streaming service. It is an everyday word, informal and completely normal in speech. Grammar worth memorising: you unsubscribe FROM something, never 'unsubscribe something'. And it is usually used alone, with no object at all — 'I unsubscribed.' The word also has a small joking life online: people say 'unsubscribe' as a way of saying 'I don't want to hear any more of this', the way an older joke was 'no thanks, take me off your mailing list'. Note that unsubscribing from a company's mail is not the same as deleting your account — the account usually stays, the emails just stop. Some dictionaries also list a noun 'unsubscribe' for the link itself ('click the unsubscribe at the bottom'), which you will see written but rarely hear.
組成un- (undo, reverse the action) + subscribe. Subscribe comes from Latin sub- (under) + scribere (to write) — literally 'to write your name underneath', which is how people once joined a list: they signed at the bottom of it.
