So hard to say out loud that you give up trying — usually said about a name, a word, or a place from a language you do not know. Notice that this is almost never literally true. Real people say these words every day; what the speaker means is "I cannot say it", or "people like me struggle with it". So the word is really a comment about the speaker, not the word, and this makes it a little risky. Said about a foreign colleague's name it can sound lazy or even rude, as if the name were the problem rather than your effort. Used about long medical or chemical terms, or a joke Welsh place name, it is harmless and often funny: "some unpronounceable chemical in the ingredients list". You will meet it most in relaxed writing and speech, frequently with a shrug attached — "a restaurant with an unpronounceable name". There is also an occasional noun use for such a word itself, but that is rare.

組成un- (not) + pronounce + -able (can be done). So: cannot-be-said. The -able piece is the same one hiding in readable, washable, and countable; it came to English through French from Latin -bilis, which is why so many "can be done" words end this way.
