'Assuming' here is an old adjective meaning 'acting as if you deserve importance' — from 'assume' in the sense of taking something for yourself, such as taking a rank or a right you were never given. So 'unassuming' = not taking for yourself anything you were not given. Note that this 'assuming' is almost dead as an adjective in modern English; the negative form is the one that survived.
