Shopfitting is the work of putting equipment into a shop and changing the way the shop looks — shelves, lights, counters, floors, the front window. It is the name of the trade, not the name of the person (that person is a ). British English uses this in business talk, job ads, and building work. You work in shopfitting; a company offers shopfitting. It is not a word you need in a café chat. Though actually, shopfitting is often a race against the calendar: a shop wants to open on a certain day, so the new inside has to be finished on time. Fitting here means the putting-in of the fittings — the pieces that make a room ready to use.
