A self-sacrificing person keeps choosing not to take or keep things they want or need, so that someone else is helped. It is the adjective that matches self-sacrifice. People mostly use it as praise: a self-sacrificing parent, a self-sacrificing friend. Though actually, it can also sound a little heavy, even worrying — as if the person never keeps anything for themselves. It describes character and a pattern, not one small favour. You would not usually call someone self-sacrificing just because they lent you a pen.
