Scratchings are a snack: small pieces of pig’s skin cooked in hot fat until they go hard and crunchy, then eaten cold. In Britain people almost always say pork scratchings — a bag in a pub, salty, a bit greasy, noisy to chew. They are not a hot dish and not a meal; you eat them with your fingers. Speech likes the plural: you buy scratchings, not one scratching. In the United States a close snack is pork rinds, which are often lighter and more puffed; British scratchings are usually thicker and chewier. Though actually, scratchings can also mean the little marks left when something is scratched — a cat’s scratchings on a chair — but on a snack shelf it is the pig-skin food.
