Quilting is the work of making a quilt — the cutting, the layering, the sewing — and it is also the name for that stitch-work itself: the lines of stitches, and sometimes the padded material they hold. Some people quilt as a quiet hobby, sitting with a frame or a machine for hours. The word can mean the activity (“I love quilting”) or the stuff you see on the cloth (“the quilting on this jacket is very fine”). It is a craft-and-shop word, used by makers; not slang.
