Picture a senior university teacher — someone who has mastered a subject and openly teaches it from the front of the hall. The same picture sits behind both senses; only the rank shifts a little between British and American use.
From Latin 'professor' = one who publicly declares/professes (a subject), from 'profiteri' to declare openly — a teacher who openly professes expertise in a field.
