To marinate is to put meat or fish (or other food) into a marinade, or to leave it sitting there for some time. You marinate food so it tastes better, and cooks hope it stays juicier too. The food can be the subject as well: the fish is marinating in the fridge. This is normal kitchen language everywhere. Casual English, especially among younger speakers, stretches it away from food: “let that marinate” means sit with an idea for a while; don’t rush. That stretch is and informal — fine with friends, not for a careful essay. The cooking meaning is the one you will meet first and most.
