You can picture ironing as the household job at the board: a hot iron pushed across a shirt until the creases disappear. The word then does a small, very ordinary trick — it stops naming the work and starts naming the clothes the work is waiting on. "I'm doing the ironing" is the job; "the ironing is on the chair" is the pile of shirts. Same word, one step sideways from the action to the things it acts on.
