An ex-serviceman is a man who used to be in the army, the navy, or the air force, and does not serve now. It is especially British, and a little formal — the kind of word newspapers and charities use. Though actually, in American English people more often say veteran, for men and women alike. Service here means time in the armed forces, not helping a customer and not repairing a car.
