Paid in real notes and coins, with nothing written down. A builder fixes your roof, you hand him the money, and there is no receipt, no bank record, nothing that says the job ever happened. That is cash-in-hand work. The phrase is British and Australian; Americans would say "under the table" or "off the books". People say it about small jobs — cleaning, , painting a wall, waiting tables. The reason the phrase exists is that no record usually means no tax. Everyone knows this, so the phrase carries a small wink: it is not a crime word like "fraud", but it is not innocent either. Some people say it lightly ("he pays me cash-in-hand") and some say it carefully, depending on who is listening. Note the grammar: with the it sits before a noun — a cash-in-hand job, a cash-in-hand payment. Without it comes after the verb — he paid me cash in hand. Also, "cash in hand" can sometimes just mean the money a business physically has right now, with no hint of hiding anything, so the situation tells you which one is meant.
