Cutting shapes into wood with knives and chisels to make art — and also the finished piece itself. When it means the craft it's uncountable, with no 'a' and no plural; when it means an object it's countable — one woodcarving, three woodcarvings. It suggests careful, slow, artistic work, usually by hand, not machine-made furniture. Temple decoration, small animal figures, patterns on a door — all woodcarving.
