Around for a long time, and because of that, solid — people know it, trust it, and expect it to stay. It is used two main ways. About businesses and organisations: a well-established company, school, or restaurant is one that has been running for years, has customers, and is not going to disappear next month. This is the everyday use, and it is a compliment — it says 'safe, reliable, proven'. About ideas and facts: a well-established theory or a well-established practice is one that has been tested and accepted for a long time, so people no longer argue about it. Both uses share the same core: time has done the proving. Notice the quiet extra meaning — well-established is not only old, it is also fixed in place, hard to move. That is why the word is sometimes used with a small sigh, about a habit or a tradition nobody can change any more: 'the custom is well-established'. The word is fairly formal and very common in business writing and news.
