A weeknight is any evening or night from Monday to Friday — that is, a night that is followed by a working day or a school day. The word carries a feeling with it, not just a fact about the calendar. When people say "it's a weeknight," they usually mean: I can't stay out late, I shouldn't drink much, I have to get up early. So you hear it most in sentences about what someone will NOT do: "I don't go out on weeknights," "Not on a weeknight." Notice the boundary is a bit soft. Officially the weekend is Saturday and Sunday, so Friday night should be a weeknight — but almost nobody in daily speech calls Friday night a weeknight, because Friday night feels like the weekend has already started. Sunday night is the opposite case: it belongs to the weekend on paper, and some people would call it a weekend night, but many treat it as a weeknight because Monday morning is coming. If you want to be exact, say "Monday to Thursday." The word is ordinary and informal — you can use it with anyone. There is a matching adjective use before a noun: "a weeknight dinner" (a quick, simple dinner), "weeknight TV." Shops, restaurants and gyms use it in notices: "Weeknights only." And note the plural-with-s form is how people talk about a habit: "on weeknights" means on weeknights in general, while "on a weeknight" points at one.
組成week + night. week goes back to Old English wice, and further back to a very old root meaning something like "to turn, to change round" — a week is a stretch of time that comes round again. night is just as old and means what it means now. So the word is exactly what it looks like: a night of the week (as opposed to of the weekend).
