Velveeta is an American brand of processed cheese — a soft, orange, slightly rubbery block that comes in a rectangular box and melts into a smooth sauce without going or stringy. That melting is the whole point of it. Americans use it for grilled cheese sandwiches, cheeseburgers, and cheese, and above all for the hot cheese dip served with chips at parties and at big football games. It is legally not allowed to be sold simply as 'cheese' in the US, and the label says 'pasteurized recipe cheese product' — which tells you how far it sits from something like . So the word carries a strong feeling. To many Americans it means childhood, comfort and family food; to others it is the cheap, fake, kind of cheese, and calling something 'Velveeta' is a small insult meaning smooth and processed and not real. Writers use it that way about music and films too. It is a proper noun with a capital V, and it does not take a plural or 'a'.
