A very big open container for holding liquid, usually while something is being made in it — beer or wine fermenting, cheese curdling, cloth being , chemicals being mixed, soup being cooked in a factory. Think of something you could climb into, made of wood, metal, or plastic; a bucket is not a vat. The picture is always industrial or old-craft, never the kitchen at home. You meet it most often in 'a vat of…': a vat of beer, a vat of oil, a vat of soup. Because it suggests a huge amount, people also use it as a joke for quantity — 'I drank a vat of coffee to finish the report'. There is a verb 'to vat' (to put something in a vat), but it is rare and technical; you can safely ignore it. Note the spelling trap: written in capitals, VAT is something completely different — Value Added Tax, the sales tax added to prices in Britain and much of Europe. Same three letters, no connection at all.
