Of food or drink: no sugar (or other sweetener) has been added. You see it on labels and menus — unsweetened tea, unsweetened yoghurt, unsweetened soy milk, unsweetened almond milk, unsweetened cocoa powder, unsweetened apple sauce. The important thing is that unsweetened is about what someone ADDED, not about how the thing tastes. Unsweetened apple juice still tastes sweet, because the sweetness was already in the apple; nobody put sugar in. So unsweetened is not the same as "not sweet", and it is not the same as "sugar-free" or "無糖" in the strict sense either — a sugar-free drink usually has an artificial sweetener in it, while an unsweetened one has nothing added at all. That difference matters when you read a label. In Taiwan this word is handy at drink shops: what we ask for as 無糖 is, in English, "unsweetened" or, more naturally when ordering, "no sugar". Baking cocoa and baking chocolate are also sold unsweetened, and eating a piece by mistake is a lesson you only need once — it is bitter.
組成un- (not) + sweetened. Sweetened = sweeten (to make sweet) + -ed; sweeten = sweet + -en, the ending that means "make it become".
