A saddle is the leather seat you strap onto a horse's back to ride it, so unsaddling is what you do at the end of a ride — loosen the straps, lift the saddle off, let the animal rest. It is a small, specific, practical word, and if you never go near horses you may never need it. There is a second use worth knowing because it shows up in older stories: to unsaddle a rider means to knock them off the horse. In a battle or a joust, one knight unsaddles another. Here the object is the person, not the equipment, which can be confusing the first time you meet it. Modern writers use this sense rarely and usually on purpose, for an old-fashioned flavour.
