To take the cork out of a bottle, and so open it. In sports writing, especially American, a player uncorks a shot or a throw, meaning a sudden powerful one that had been building up. The word is not common in everyday conversation; most people just say 'open the wine'. When someone chooses 'uncork', they are usually being a little vivid or a little grand on purpose.
