Something that is structured has been organised on purpose, with clear parts and a clear order. A structured lesson has a beginning, a middle and an end that were planned before class started; a structured day has set times for set things. The word is a quiet compliment — when people say a course, a plan, or a piece of writing is structured, they mean you can see the shape of it and you know where you are inside it. The opposite is not usually 'bad' but 'loose' or 'free', and some people prefer that; a teacher might say 'my class is quite free' and mean it as a good thing too. You also hear it as a warning about a person: 'he needs a structured environment' means he does better when someone else sets the order for him, which is a kind way of saying he struggles on his own. Note that structured describes the thing, not the person doing it — a person who likes order is 'organised', not 'structured'. In business and finance the word goes a bit strange: a 'structured product' or 'structured deal' means one built out of parts in a arranged way, and there it can hint that the arrangement is clever, maybe too clever. And 'structured' can be the past form of the verb structure — 'we structured the report in three parts' — which is how the adjective was born in the first place.
