A man who takes part in sports, especially one who plays fairly, respects the rules, and treats opponents with respect even when losing - this is the idea behind calling someone a 'good sportsman' or 'true sportsman.' The word itself can just mean 'a man who does sports,' but it very often carries this extra sense of fair, respectful behavior.
