Spelt has two very different meanings. (1) It is an old kind of wheat, used to make flour and bread — some people choose spelt bread because it feels more natural or old-fashioned than regular wheat. (2) In British English, "spelt" is simply the past tense of "spell" — "she spelt her name for me" means she said or wrote out the letters of her name one by one. American English usually says "spelled" instead.
