Sorrel is a leafy green plant whose leaves taste sharp and sour — rather than bitter, really, and that sourness is the whole reason cooks want it. It is used in soups (there is a famous one in Poland and Russia), in French sauces for fish, and raw in small amounts in salads. It grows wild in fields all over Europe, and children who grew up in the countryside will tell you they used to chew the leaves. It is uncountable when you mean the ingredient: "add some sorrel". There is a second sorrel that is a completely separate word with a completely separate history, and it will confuse you if nobody warns you: a light reddish-brown colour, used almost only about horses. "She rode a sorrel mare." And in the Caribbean, "sorrel" means yet another thing again — a red hibiscus drink people make at Christmas. Same spelling, different plant. If you meet sorrel in a recipe, the sour leaf is nearly always what is meant.
組成The plant word comes through Middle English and Old French from a Germanic word meaning sour — the same family as English sour — with a small ending that means "the little sour one". The horse-colour word looks identical but is unrelated: it comes from an old French word for yellowish-brown, from a Germanic root meaning dry or withered, the colour of dried-out grass.
