In British English, a servery is the place in a canteen or a casual restaurant where you pick up your food and then carry it back to a table. It is the counter, the trays, the hot plates — not the kitchen behind, and not the dining room in front. You walk along, take a plate, and someone behind the glass may serve you, or you may serve yourself. Americans would more often say serving line or cafeteria counter. The word is ordinary in UK schools, hospitals, and workplace canteens; it is not posh, just local. You will rarely hear it in American speech.
