    A serrano is a small pepper, usually sold green, and it is very hot — hotter than the more famous jalapeño. It comes from the mountains of Mexico, in states such as Puebla and Hidalgo. English keeps the Spanish name. Cooks slice it into salsa or cook it with meat. You can also buy it red when it has , but green is the usual picture. Though actually, Serrano on a menu is not always this pepper: jamón serrano is a mountain ham from Spain. Same Spanish idea (from the mountains), different food.
