Semisweet is almost always about chocolate. Semisweet chocolate is darker than milk chocolate and only a little sweet — you taste cocoa more than sugar. Bakers love it for chips in cookies, because it holds its shape better than a sweeter bar and does not turn the whole biscuit into candy. It is not unsweetened chocolate, which has almost no sugar, and it sits close to bittersweet, which is usually less sweet still. Though actually, companies do not all mean the same amount of cocoa, so the label is tidier than the chocolate. You will not often hear semisweet about fruit or drinks; it belongs to the chocolate aisle and to recipes. In shops the bag may say semi-sweet with a hyphen. Same word.
