A restaurateur is someone who owns and runs a restaurant — the boss, not automatically the chef, and not the waiter. It is a French word we borrowed as it is, so it is a little formal; in everyday talk people often just say the owner, or “she runs a restaurant.” You will hear it in newspapers and business talk more than at the dinner table. It covers one small café or a whole group of restaurants.
