Residency has a few uses. Most simply, it means the fact of living in a place — 'she applied for residency in Canada' means she wants official permission to live there long-term, which is different from citizenship. In medicine, a 'residency' is the years of training a doctor does in a hospital right after medical school, working under supervision to specialize — 'he's doing his residency in surgery.' It's also used for artists or musicians who stay somewhere for a period to work, an 'artist residency.'
