Pembrokeshire is a county in western Wales, on the sea. The name is built the usual English way: Pembroke (a town there) plus -shire, an old word for a county. You stress the first part, PEM-brook, and -shire often sounds like 'sheer' or a soft 'shuh', not like the word shirt. It is a place-name, not a word you conjugate. People mention it for the wild coast and for holidays; you will see it on maps and in travel writing. It is in Wales, not in England, though the -shire ending is the same one you meet in English county names.
